they way i did it you put a lil caramalised onion (maybe some grated gruyere) into the egg/custard mix for the bread & proceed normally
you top it with caramelised onions & a gruyere cheese sauce
if you wanna do a stuffed challah version, same deal but you put the gruyere & onions inside & bake

Huge in Montreal as well. I think you basically need to have a large enough Jewish population that challah is just a relatively cheap and common item at anything bigger than a corner store.

For me it's the Challah French Toast, and that's the best thing for me to introduce to people not from the NY/NJ area.
