Tonight is a Mexican Shrimp Cocktail based on this recipe from Rick Bayless. I cut back on the onion and added in chopped cucumber.

Sometimes when I feel bad I forget I'm so lucky my favorite hobby is also the purest form of self care (imo). Putting a little effort into creating something also gives me an often needed attitude adjustment. Used partial veggies and protein noodles to make a shrimp pasta salad instead.

about 3 hours agoThis may look like a boring bowl of spaghetti, but, oh, if you could smell it! If you could taste it! This spaghetti has a sauce loaded with lemon (juice and zest), Calabrian chile paste, garlic, olive oil, butter, basil, salt and pepper with squid (now cheaper than eggs!). #whatscooking 🍽️💙

Szechuan food, the starter with a local (asturiaan) twist; bocartes in crispy chili cured in dumpling Vinegar. Also hot and sour potatoes, crispy chili chicken but with oyster mushroom and saffron gelato. Not pictured is the fish fragrant eggplant. 🍜🍽️

My approach to cooking is one where I rarely make everything from scratch. It’s okay to use packages and shortcuts as part of the meal.
I’m all about adding nutrients where maybe there isn’t as many.
