Around this time last year I made a white lasagna that blew my mind. I didn’t have lasagna noodles so I made baked rigatoni with shredded chicken & rapini in white sauce. I had sliced bothwell moz that needed using so that’s why it looks goofy on top. This hit the spot on this frigid day. 🍽️

In my Dutch apple pies, I use custard powder to keep the apple juicy and a thin layer of marzipan to stop the bottom from going soggy. #baking 🍽️🍜

For the pastry:
300g plain flour
200g butter, cold
100g caster sugar
2 eggs (1 for the pastry mixture, 1 yolk for brushing the top)

1 kg cooking apples (Bramleys or similar)
100g mix fruit (sultanas, raisins, orange peel etc) - soak in water, brandy or rum
80g mixed spice (cinnamon, cloves, nutmeg etc
20g ginger powder custard powder
50g almond shavings
150g golden marzipan
apricot jam (for glazing the pie - any cheap one will
• do)
Prep: 25 min | Cook: 1 hour
1. Mix the flour, sugar, and salt in a bowl. Cut the butter into dice-sized cubes and mix them in with the flour. Add 1 beaten egg. Knead it with your hands to a consistent, smooth dough.
2. Roll out three-quarters of the dough to cover the bottom and sides of a greased round (24cm) cake tin or spring form tin. Stick the dough covered tin in the fridge for now. Preheat the oven to 175 C.
3. Peel, core and slice the apples. In a clean bowl coat the apple with custard powder. Mix this with almond shavings, mixed spice, ginger and mixed fruit.
4. Take the dough covered tin out of the fridge. Grate enough marzipan onto the bottom of the tin to cover it.
Put the apple mixture on top of this. Push it down a bit to avoid gaps.
5. Roll out the remaining dough and cut into long strips, each about 1cm wide. Start with the longest strips and lay the first two in an X in the centre of the pie.
Alternate horizontal and vertical strips, weaving them in an over-and-under pattern. Use the shortest strips for the edges of the lattice. Press the ends of the strips firmly to the edge of the pie and trim away any excess dough with a knife. Brush with remaining (beaten) egg.
6. Bake for 60-65 minutes, or until pastry is light brown. It's ready when you can stick a knife or stick into it and it comes out clean. Heat a spoonful of apricot jam in a bowl over hot water (au bain marie) until it is really runny. Remove the pie from the oven. Brush the apricot jam onto the top with a pastry brush. Leave to cool down.

Was gonna make a butternut soup but my fridge had other ideas. Two pureed roasted squashes, can of diced tomatoes, .5kg diced ham, coconut milk, tried-to-caramelize onion, some scallions. It seems onion heavy but flavour's still light so might add some green onion tops for colour 🍽️ #WhatsCooking
