We're huge broad bean (fava bean) fans. Risotto with broad beans and feta is wonderful. Either whole, young beans with outer skin on or blanched older ones (slide the outer skin off). I don't add mint, though but roughly this:

Dinner was rissotto. Ingrdients were:
*Rice from Asian supermarket *butter from New World
*Pumpkin that grew from compost seeds
*Onion, elephant garlic, harvested in Feb
*Oregano
*Chicken stock made from carcass last week
*Homemade white wine
*Parmesan from eltham cheese bar offcuts

Wenn man Dürüm in die Pfanne schmeißt, darauf Cheddar und Schinken verteilt, dann noch ein Dürüm draufklatscht und dann von beiden Seiten solange brät, bis sie Farbe haben, hat man sich ein endgeiles Frühstück gemacht. 🤤
Hätte ich Eier gehabt, wären die auch in der Pfanne gelandet.
